
Cooling Cucumber Mint Salad
A light, refreshing salad perfect for Pitta season. Cucumber and mint naturally cool the body while lime adds a bright finish.
Ingredients
- •2 large English cucumbers
- •½ cup fresh mint leaves, chopped
- •¼ cup fresh cilantro, chopped
- •2 tbsp fresh lime juice
- •1 tbsp olive oil (or coconut oil for extra cooling)
- •¼ tsp black salt (or regular sea salt)
- •Pinch of roasted cumin powder
- •Optional: ¼ cup pomegranate seeds for sweetness
Instructions
Slice cucumbers in half lengthwise, then slice into half-moons.
In a bowl, combine cucumbers, mint, and cilantro.
In a small jar, whisk together lime juice, olive oil, salt, and cumin powder.
Pour dressing over the cucumber mixture and toss gently.
Top with pomegranate seeds if using.
Let sit for 5 minutes before serving to allow flavours to meld.
Serve chilled. Best eaten fresh — doesn't keep well.
